The world of food has its own sense of fashion. Chefs, bloggers and us, consumers dictate our preferences. Next, the most entertaining things to come this year. I hope to surprise you.

Today I want to present certain ingredients and food styles that will be super popular in 2019. Also, some ideas of wine pairings. Do not miss it.


1. Many colors

Lately we are all on the diet. Some say we should eat vegetables and fruit, some grains and dried fruit (vegans); others accept egg and honey (vegetarians); and others say that everything should be consumed raw (raw diet).

We also receive the influence of medicines from the East, which postulate exactly the opposite: “the metabolism begins in the pot”. That is to say, everything, all food must be cooked for a better digestion and assimilation of its properties.

On the other front, we have the diets of carnivores (paleo, primary, keto, autoimmune protocol, etc.), where we must chew lots of red meat and green vegetables, without forgetting, of course, tomatoes, peppers and potatoes.

For those who still do not decide what diet to follow, for those who still do not find the perfect balance, I have an excellent news: in 2019 comes the PEGAN diet, a crossing in paleo (meat and fish, vegetables, fresh fruit, dried fruit, oil of olive, coconut oil, ghee, eggs) and the vegan diet.

In this case, the foods we should avoid are grains with gluten (wheat is very inflammatory, even for people who are not allergic), processed food, sugar (only coconut sugar and honey are recommended) and dairy products. In addition, PEGAN advises to drink wine in moderation. You can breathe easy.


If you are missing ideas for your PEGAN meals, here are some suggestions: a lunch, dinner and even breakfast very famous among bloggers is the “buddha bowl”. Choose one food from each group:

  • Complex carbohydrate: rice, quinoa, sweet potato, buckwheat, millet, amaranth.
  • Protein: hard-boiled egg, tuna, sardines, sautéed chicken breast, adzuki beans, chickpeas, tofu, sautéed shrimp, peas, lentils, roast beef.
  • Vegetables (can be more than one): green leaves or of some other color, perhaps something cooked like broccoli or beets.
  • Taste: parsley, cilantro, hummus, spicy peanut butter sauce (just add a little soy sauce and dried ginger), avocado with tabasco, tahini sauce, basil pesto or red pesto dehydrated tomatoes.
  • Crispy element: sesame, marigold seeds, almonds, nuts or chia.

Two tips: play with the ingredients as you please. Do not be afraid to eat them warm (the microwave kills all the nutrients in the food). Also, choose a versatile, fresh and complex wine. Hopefully one with a screw cap. This ensures that your bottle keeps the same quality for several meals. My favorites are: Devil’s Collection White, Casillero del Diablo Chardonnay and Trio Chardonnay.

2. Taste to earth

Do not worry. Eating ground will not be fashionable. But yes, in 2019 we will enjoy many varieties of mushrooms. The chefs of the world go crazy for their earthy textures and flavors. I invite you to read the text about pairings between mushrooms and wine. Remember? My favorite for this year will be a simple mushroom paté and Casillero del Diablo Pinot Noir. On the griddle, sauté a bit of chopped onion in butter, add minced mushrooms, salt, pepper and thyme. Fry them for about 10 minutes. Then with the processor you will obtain a creamy texture. And voila! We just have to prepare some toast.

3. Board construction

All those foods that invite to share with family and friends will be fashionable: breakfasts, brunches, lunches and dinners, such as cheese platters, sausages, different dips and types of bread (we have to put our hands in the dough), of delicious jams (also homemade, obviously).

I prepare many tables in my house, especially in summer, when it is hot and I have no desire to cook. I invite my friends and uncork four wines of different styles to enjoy and learn about pairings: Casillero del Diablo Viognier, Casillero del Diablo Rosé and a medium-bodied red like Devil’s Collection Red.


4. Replacements

Basically, we talk about the classics of gastronomy, but prepared without grains and dairy. For example, cauliflower pizza dough, Italian squash spaghetti, cauliflower rice, sweet potato fries, crispy chickpea popcorn and banana and avocado ice cream. The trick is to preserve the physiognomy or style of the dish, but using healthy ingredients, rich in protein and with lower caloric index.

These preparations, so fashionable, can retain a very gourmet style. For example, you can use Japanese “glass” noodles, made with sweet potato starch (in almost all diets sweet potatoes are allowed, since they are low in calories and glycemic index). You can also prepare a Korean dish called japchae, which includes garlic, sesame oil, chives, mushrooms, peppers, carrots and sesame seeds, all sautéed in wok and seasoned with soy sauce. Really delicious with Casillero del Diablo Pinot Grigio or Rosé.
