5 pairings to celebrate this Christmas

For Christmas I’d like to propose some pairings of typical dishes of the season with our wines. Discover these harmonies and encourage yourself to try them in family and with friends. Best wishes!

Roast turkey stuffed with chestnuts, loquats, bacon and onion

Maridaje-Terrunyo-Carmenere

I would recommend for this dish a pairing with Terrunyo Carmenere, as turkey is not very fatty or strong but does have an important and tasty stuffing.

This requires a medium-structured wine but with sufficient ageing to support the stuffing.

Roast lamb with potatoes

Maridaje-MCC-Syrah-

I would accompany this dish with a Marques de Casa Concha Syrah as this meat has a quite strong flavor and therefore needs a wine with a good structure and body to balance it.

The Marques Syrah is a wine with exuberance and important body which offers a very good harmony with spicy and tasty meats like lamb.

Potatoes au graten with rosemary

Maridaje-CDD-CS
I would choose Casillero del Diablo Cabernet Sauvignon for this dish as, although not a wine strong enough to hide the flavor of the potatoes, has the structure and balsamic and aromatic notes to harmonize with the aromatic herb that accompanies this dish.

Christmas cake

Maridaje-Late-HArvest
Christmas cake goes very well with a Late Harvest Concha y Toro which has notes of dried and crystallized fruits that combine very well with the ingredients of this cake.

Orange Christmas tart

Maridaje-Sparkling
This tart would be paired with a Casillero del Diablo Brut Reserva as it is a very sweet dessert that would go well with a sparkling wine to clean the mouth.

This Sparkling Brut Reserva is a dry wine so its balance with this dish is obtained by contrast, managing to offset the sweetness of the tart.
