For this chef of international fame using the freshest ingredients and balancing all the flavors in his cuisine is his main concern.

Some of the essential ingredients in his preparations are peppers, cilantro, beans, tortillas and avocados.

As for his favorite preparations, Richard Sandoval tells us that one of them is the poblano pepper stuffed with shrimp and octopus and served with black bean puree and chile de arbol sauce: “I also love seared scallops with avocado puree and grilled watermelon achiote truffle sauce, and wonton tuna tacos with mango pico de gallo adobo salsa”.
