This varietal has its roots in France, in the Bordeaux region (a cross between Cabernet Franc and Sauvignon Blanc), although Cabernet Sauvignon can be found in nearly all wine-producing regions around the world. Under different climate and soil conditions, Cabernet Sauvignon reveals many faces. In Chile, Cabernet Sauvignon has reigned since the 19th century, but it undoubtedly found its home in the Maipo Valley, on the slopes of the majestic Andes Mountains.
Although this grape adapts well to different terroirs, it requires certain soil and climate conditions to showcase its best attributes. It prefers pure soils with good drainage. Terrunyo Cabernet Sauvignon is made from grapes grown in the Pirque Viejo vineyard, in Maipo Alto, where the soil is alluvial, with many stones on the surface and a gravel subsoil. This soil profile, combined with the Maipo Alto climate, are key factors to producing a high-quality Cabernet Sauvignon.
This varietal has a naturally rich acidity, but the Maipo Alto terroir enhances these characteristics. The breeze coming down from the mountains helps cool the fruit during the ripening season, allowing for the harvest of perfectly balanced fruit with just the right amount of sugar and acidity.
Terrunyo Cabernet Sauvignon is captivating with its aromas of blackcurrant, cassis, chocolate, pepper, and graphite. With age, and depending on the characteristics of the harvest, notes of plums, dried plums, cedar, spices, and coffee are enhanced. It is a great-bodied wine with a very expressive bouquet, making it an ideal companion for red meats such as steak, hamburgers, goulash, stew, lamb, and even duck. Its dark fruit notes also pair well with a number of dark sauces, such as plum, blueberry, wine reductions, or mushrooms.
