We have a delicious sauce with smoky notes, acidity, crunchiness, and a hint of sweetness. Because of its structure, complexity, and smokiness, this dip ideally needs an oak-aged wine. If paired with seafood, it goes great with a Marques de Casa Concha Chardonnay. Romesco and doughy foods or potatoes would pair very well with a fruity and light red wine such as Amelia Pinot Noir.
