The winery’s new venture, run by the renowned chefs of the Áurea restaurant, Ismael Lastra and Tomás Saldivia, is designed to be a meeting place where visitors can enjoy the best wines along with superb, sustainable, and innovative cuisine. The restaurant is at the backdrop of one of the national wine industry’s most unique historical monuments.
At Bodega 1883, wine is the protagonist. For that reason, Chefs Ismael Lastra and Tomás Saldivia (in the national top 10) have created a seasonal menu based on ingredients from local Pirque producers and with wine at the center.
Furthermore, sustainability is at the core of the spirit of this venue, which is why the restaurant’s motto is “to celebrate the harmony between people and nature every day.” The kitchen is equipped with state-of-the-art technology for maximum energy efficiency and to minimize waste so that the restaurant has the lowest environmental impact possible. In addition, to show their strong commitment to the surrounding community, the chefs will source the finest raw materials from local suppliers.
